Tried and True Apple Fruit Cake

Cooking time: 45 minutes
Serves: 8-10
Cake tin size: 20cm round or square

Cake ingredients

1 ½ cups self-raising flour

Pinch of salt

1 cup sugar

1 teaspoon ground cinnamon

2 large, free-range eggs, lightly beaten

125g unsalted butter, melted and cooled

1 teaspoon vanilla extract

2 medium to large cooking apples, peeled, cored and diced into 1cm cubes

1 cup sultanas, dates or other dried fruit

Topping ingredients

½ teaspoon ground cinnamon

1 tablespoon sugar



Preheat oven to 180oC (160oC fan-forced) and lightly grease and line a deep 20cm round or square cake tin with baking paper.

In a large mixing bowl mix flour, salt, sugar and cinnamon, stirring until combined. Add eggs, butter, vanilla, apple and sultanas, stirring until well combined. Spoon mixture into prepared cake tin and smooth the top.

For the topping, combine the cinnamon and sugar together in a small bowl and sprinkle over the top of the cake mixture. 

Bake in preheated oven for 45 minutes or until a skewer comes out of the centre clean.
